Using peat to flavor a scotch or whiskey adds another dimension to the flavor profile beyond the grains selected and cask aging.
The peat phenols are introduced to a grain during the malting process (such as frequently with scotch from Islay), or its influence can be added during the aging process (by parking a whiskey in a barrel previously used to age a peated scotch). However an expression is peated, you'll get another layer of flavor to savor.
