Types of bread bakers
To bake dark, crusty bread, there are many different types of baking vessels you can use, from lidded pots to baking pans. Some are able to be preheated as the oven heats, while others heat as they bake. Vessels with some type of fitted lid are preferred because they trap the steam as the dough bakes, giving the finished loaf a nice, crusty exterior.
Cast iron: Great to bake in because they hold in the heat well, have a fitted lid, and come in different shapes (round, oval, or long):
Stoneware: Lidded stoneware pots can be preheated, and can come in different shapes:
Flat surfaces: Fine for bread baking, and you can use an inverted metal bowl or aluminum roasting pan as a lid substitute:

- Kitchen scale: One of my most-used tools, a kitchen scale helps to ensure accuracy in measuring out your ingredients. It's a must-have for me!
- Extra large 6-quart bucket: A large clear bucket is useful so you can see the dough rising.
- Parchment paper: Great for transferring shaped dough to your baking vessel, and will keep it from sticking. Parchment paper can be reused if you have more than one loaf to bake.
- Bread lame: Used to slash the dough before it goes into the oven.
- Pizza peel: Useful for placing and removing the shaped dough on parchment paper to a flat bread baker in the oven.
- Digital thermometer: To make sure the bread is fully baked, it's good to check the internal temperature of the loaf.
